Honey-file to detect ransomware

I was wondering if it was possible to detect unauthorized access to a computer, by observing when a special file is accessed. So setting up a file being a honeypot. Searching whether someone was using this approach, I’ve come across this post:

So I wasn’t the first to come up with this idea, but is it really practical? I would think more people would be using this if it actually worked.
